Badusha (Diwali Sweet)

Badusha is a famous sweet in India. It is made during Diwali and weddings.It is not too sweet and tasty too. I prepare this sweet  for Diwali.
Ingredients

Badusha












  • Maida...................3cups
  • Ghee.....................3tbsp
  • Baking Powder.....1/2 tsp
  • Bakin Soda............1/4tsp
  • Yogurt..................3cups
  • Sugar.....................5cups
  • Cardamom............1/2tsp
  • Salt to Taste
Method
  • Mix maida, ghee, baking powder, salt .Add yogurt and make a thick dough 
  • No water..Keep the dough in the fridge for about two hours.
  • Prepare sugar syrup by adding water to the sugar and boil to one thread consistency.
  • Heat a pan with oil. Make a lemon size ball with the dough and  flatten it and press at the middle with your thumb.drop them in the hot oil. 
  • When they are in golden colour, remove them and keep to cool. 
  • Drop all the badushas in the syrup and keep 15 minutes. 
  • Remove them and keep them in a tray.
    The badushas are coated with the sugar syrup .

Wheat Halwa (Diwali Traditional Sweet)

Wheat Halwa

Tirunelveli Halwa is very famous. Whenever we visit Tirunelveli we buy lots of halwa for our friends. We buy from old Shanthi stores.For every diwali we used to make this halwa.It is time consuming work. But the taste is very very good. Here is the recipe.


Ingredients

Wheat....................2cups
Sugar....................2cups
Ghee.....................500gms
Cashew nuts..........few
Saffron.................a pinch
Cardamom Powder......1tsp

Method

Wash and soak the wheat overnight. 
Grind the wheat adding enough water to squeeze out all the milk..
Remove the wheat milk and filter it. Keep it for  a day.
Remove the watery layer.Bottom you get thick milk. 
Pour the milk in thick bottom vessel add sugar and cook.
Keep the flame low.Add ghee in between stir continuously.Add the saffron and cardamom powder.
Cook till the halwa becomes very thick.You can see the ghee coming out.
Add the roasted cashew nuts. 
Spread in a greased plate.Cut them into squares when it becomes cool.

Pal Paniyaram

This Pal Paniyaram is famous sweet in Chettinadu, I make this sweet very often.
Ingredients
  • Raw Rice.................1 cup
  • Urad Dhal................1cup
  • Salt........................1/4 tsp
  • Grated Coconut...........2cups.
  • Cardamom Powder......1tsp
  • Sugar.........................3cups
Method
  • Soak the rice and dhal for 4hours. Grind them to a fine paste by adding salt.
  • Heat a pan with oil drop small dough like very small balls. Fry them till they become golden. Grind the coconut and take juice. Add sugar and cardamom and mix well. Drop all the balls into this milk and cover for an hour. Eat them..

Nilakadalai Urundai (Kadalai Urudai)

Ingredients
  • Peeled Peanuts...........................2cups
  • Jaggery........................................1cup
  • Cardamom Powder....................1/2 tsp
  • Ginger Powder...........................1/4 tsp

Method

  • Roast the peanuts and peel them
  • Heat a pan with little water and add the jaggery .
  • When you get a thick syrup(drop little jaggery syrup in the bowl of  water.
  • If you can make a ball out of it) add the peanuts and cardamom  and ginger powder. Mix well to coat all the peanuts with jaggery.
  • Remove to a plate and dust your palm with rice flour  and make small balls of the mixture..
  • Be careful of the heat. It is very tasty sweet.
