Ginger Cookies

Ginger Cookies  are baked

Ingredients


  • All Purpose Flour...............3/4 cup
  • Whole Wheat Flour............3/4 cup
  • Oil......................................3/4 cup
  • Milk...................................1/2 cup
  • Baking Soda......................1/4 tsp
  • Baking Powder..................1/4 cup
  • Powdered Flax seed..........1tsp
  • Dry Ginger.........................1tsp
  • Vanilla Essence................. .!/2 tsp
  • Salt....................................1/2tsp
  • Crystallized Ginger..............2tsp
  • Lemon Zest..................... ..1/2 tsp
  • Brown sugar....................  .1/2 cup.
  • Cinnamon........................ ..1/4 tsp
  • Powdered Sugar.................1/4 cup
Method
  • Preheat the oven into 350 degree.
  • Mix all ingredients in a bowl and make a soft dough, till all incorporated well..
  • Make small balls out of the dough and flatten the balls slightly with your fingers 1"diameter.
  • Place them  1" a part in a baking sheet. Bake them for 10 to 12 minutes.
  • Cool them and put in a tight jar.
Oats Cookies
  •  Maida, powdered oats and whole wheat flour equal parts( half cup each) with 3tbsp melted butter, powdered  flax seeds with3 tbsp. water, brown sugar ( I use gud / vellam/ jaggery) and sugar 3/4 cup  baking soda, salt, coarsely powdered walnuts, almonds and cashew nuts 1cup, vanilla essence and cinnamon. 
  • Mix  all ingredients every well, make small balls place them keep in a baking sheet and bake in 350  degree preheated oven  for 12 minutes.
  • Healthy cookies are ready to eat.

This sweet is a North Indian dish. They make this sweet for weddings and festivals. You can also make this sweet  with jaggery..Use koya instead of coconut
 
For Dough

  • Maida(All Purpose Flour)...................1 cup
  • Rava (Suji).........................................1tbsp
  • Oil/Ghee.............................................2tbsp
  • Warm Water for dough.......................1/4 cup
Filling
  • Grated Coconut ............................1 cup
  • Sugar.............................................1/2 cup
  • Sliced Badam.................................3tbsp
  • Chopped Cashews.........................3tbsp
  • Cardamom Powder........................1tsp
Method
  • Mix maida and oil, using hands mix well. Add water and make  soft dough.
  • Cover with damp cloth and keep.
  • Roast the coconut on low flame till it becomes light red.
  • Mix sugar add little water in a pan and cook till the sugar is dissolved fully
  • Add coconut cashews  almonds and cardamom.
  • Make equal sized balls out of dough. Roll the balls into circles 4" wide.
  • Place 1tsp of filling in the center and fold in semi circle. Pleat the edges to seal. Do all the same way.
  • Deep fry them in medium flame.. remove them in paper towels.

Semiya Payasam

  • Ingredients

    Sugar.................................2cups
  • Semiya..............................1cup
  • Milk(Whole).....................1 liter
  • Cardamom........................1/4 tsp
  • Cashew Nuts/ Raisins........1/4 cup
  • Ghee ................................2tsp

Method
  • Roast the cashews and raisins and keep.
  • Use the same pan to roast the semiya, adding little ghee till it becomes golden.
  • Boil the milk and add the semiya and cook in it.Semiya Payasam is very easy to prepare and it tastes good
  • When the semiya is cooked well, add the sugar and mix well.
  • Add the cashews, cardamom  and raisins.
  • Serve hot or cold.

  • Green Moong Dhal……… ½ cup
  • Jaggery…………………...½ cup
  • Grated Coconut………….!/4 cup
  • Cardamom Powder………1/2tsp
Method
  • Roast the moong dhal,  till it becomes golden and nice  aroma.rises.
  • Pressure cook the moong dhal by adding water.
  • It should cook well so that it incorporate with jaggery well.
  • Heat a pan with little water, add the jaggery.
  • When it dissolves add the cooked moong dhal and mix well.
  • When it mixes well add coconut and cardamom Powder.

  • Grated Coconut...........2tsp

  • Cardamom Powder.....1/4ts
Method
  • Roast the rava and coconut with the ghee into golden brown color.
  • Another pan add 1/2 cup water and sugar ,boil till it becomes one string consistency. 
  • Mix both and stir for sometime. Turn off the flame.
  • Add roasted cashew nuts and cardamom powder.
  • The dough becomes ready to make balls...
  • Ladus will become firmer if left alone for some time.

  • Grated coconut.......................2cups

  • Cardamom Powder................1/2tsp
  • Ghee......................................2tbsp
Method
  • Grind the coconut coarsely.
  • Heat a pan with 1/2 cup of water add the powdered jaggery and make a pagu.(syrup)
  • Filter the same, using a filter to remove the dirt if any.
  • Boil again and add ground coconut and ghee and stir it till it becomes thick and  you can make a small ball out of it with out sticking.
  • Keep this sweet for a month

Chenai Pradhman( Yam payasam)

We rarely make Chenai Pradhan  in our house  because   there are  many varieties of Pradhaman. Pazha pradhaman, Ada Pradhaman, Palada Pradhaman , Chakka Prdhaman etc.For this Pradhaman it is good if you choose new chena. It cooks very fast,

Ingredients
  • Chena (Yam) pieces.........................1 cup
  • Jaggery............................................3cups
  • Coconut..........................................2cups
  • Coconut Pieces...............................3tbsp
  • Cardamom Powder..........................1tsp
  • Cashew nuts.....................................few
Method
  • Wash the chenai and remove the skin and cut into pieces.
  • Pressure cook the chenai pieces adding water to it. It should cook well.
  • When it cools, remove the water and grind into fine paste.
  • Add water  and jaggery boil it and kept.
  • Grind the coconut and extract the  second and first milk 1 cup each.
  • Heat pan with ghee add the ground chenai . and jaggery water and cook in a low flame.until it cooks well.
  • Add the second milk first and boil it.
Then when becomes thick add the first milk.
Then it should not boil.
Fry the coconut pieces and nuts and add to the payasam. Sprinkle cardamom powder.

Sweet Semiya Elai Adai (Vermicelli Elai Ada)

This sweet adai is like elai adai with jackfruit, coconut poornam etc. This adai is made up of semiya. Very tasty and easy to make.

Ingredients

  • Semiya........................1cup
  • Sugar..........................3/4 cup
  • Milk.............................3cup
  • Cardamom Powder......1/2tsp
  • Grated Coconut............1cup
  • Ghee.............................3tsp
Method
  • Heat pan with ghee add semiya and fry a little.
  • Add milk and let it boil.
  • When the semiya is cooked well, remove from the flame and let it cool.
  • Add the sugar , cardamom powder and coconut.
  • Mix well, add the ghee and make big balls and keep.
  • Take banana leaf and make it soft by placing over the flame for few seconds, so that you could fold it.
  • Place the ball sized dough in the leaf and fold it into half. 
  • Heat a non stick tawa place the adais on it.
  • When one side is cooked turn the other side. 
  • Serve with ghee.
  • Banana leaves are available at Asian stores in USA.

Rava Cake

  • Rava..................1/4 cup
  • Maida................1cup
  • Sugar.................1cup
  • Butter.................1/2cup
  • Milk...................1cup
  • Baking powder...1/2tsp
Method
  • In a bowl mix maida, sugar and milk and make into a paste.
  • Add rava, butter  and baking powder.
  • Mix well and  keep it for 15 minutes.
  • Take a baking pan grease with butter and pour the batter evenly and bake it for fifteen minutes to 300 Degree.
  • When the toothpick  come out clean and  then it is done.

  • Carrots......................2cups
  • Sugar.........................1cup
  • Baking Soda...............1/4 tsp
  • Soy Milk.....................1cup
  • Oil..............................1/4 cup

  • Raisins.......................1/2cup
  • Whole wheat flour......3 cups
  • Salt a Pinch
Method
  • Grate the carrots. Add little water, carrots, raisins and spices in a pan and boil for five minutes.
  • Add sugar and salt. 
  • When the carrots are softened remove from the flame and cool it.
  • Preheat the oven to 350 degree . 
  • Take a large bowl add flour and soda together mix it well. 
  • Add the cooled carrots along with soy milk ,oil and mix well..
  • Grease the pan spread the batter. 
  • Bake it for 50 minutes.

  • Heat a pan with 1/4 cup water and jaggery.
  • Mix well. When the syrup becomes thick put off the flame and add the cheerios, walnut and coconut.
  • Mix well and make ball after wetting your hand.

  • Soak the rice for about 2 hours and grind with coconut into a very fine paste.
  • Add sugar and cardamom and grind one round.
  • Heat appam vessel with oil and pour the batter into the kuzhi. (Use non stick appakkarai)
  • When one side is cooked turn to other side.
  • Remove the appams in to a paper towel.
  • It tastes very good.

Pazha Pradhaman

Pazha Pradhaman.

We make payasam with ripe banana(Nentrapazham).It is the one of pradhaman  dish in Kerala.
Onam sadya is not complete without delicious pradhaman with ada, chakkavaratti or pazham.

Ingredients

Nentrapazham varatti
  • Nentrapazham..............6
  • Jaggery......................2cups
  • Ghee.........................3tbsp
Method
  • Remove the skin of the pazham ,cut into pieces. 
  • Cook the pieces in cooker with out adding water. 
  • Grind in blender into fine paste.
  • Heat a pan with little water add jaggery. 
  • When it mixes add the paste and mix well.
  • Add little ghee and make like thick jam(Chakkavaratti)
Pradhaman
  • Pazham Varatti........................1cup
  • Jaggery...................................1cup
  • Coconut Milk (1st one)...........1cup
  • Dry Ginger Powder................1tsp
  • Coconut Milk (2nd one).........2cups
  • Coconut Pieces.....................3tbsp
  • Ghee to fry coconut.

Method

  • Mix the pazham varatti and 2nd milk and boil this mixture. 
  • Add jaggery and let it boil.When all are mixed well, add the 1st milk. 
  • Then it should not boil. Fry the coconut pieces and add to the pradhaman
  • Sprinkle dry ginger powder.
  • It is very tasty payasam.

Whole Wheat Flour Coconut Burfi

Ingredients

  • Jaggery..........................1/2 cup
  • Wheat Flour...................1cup
  • Milk..............................2tbsp
  • Sesame Seeds................2tsp
  • Dry Coconut Powder,,,,,3tbsp
  • Ghee..............................2tbsp
Method
  • Mash the jaggery into powder.
  • Grind the dry coconut into fine powder.
  • Heat a pan with ghee on medium flame add wheat flour and fry for 5 minutes.
  • Then add jaggery, coconut powder and sesame seeds.
  • Cook in low flame by adding milk.
  • When it becomes thick pour into a greased plate.
  • Press them nicely Cut into desired shape. 
  • Make sure not to overcook the jaggery .if you like add crushed nuts.

Eggless Date Cake



Ingredients

  • Chopped Dates...............1cup
  • Water..............................2cups
  • Sugar..............................1cup
  • Cinnamon.powder..........1tsp
  • Clove  powder................1/2tsp
  • Maida.............................2cups
  • Salt............................    .a pinch
  • Vanilla essence............    1tsp
  • Soda Powder...............  .2tsp
  • Corn oil(any oil)..........  ..1/4 cup
Method
  • Soak the dates in 1cup of water for 3hours.
  • Heat 1cup of water add the soaked dates with water. 
  • Add cinnamon powder, sugar, salt ,clove powder, oil and vanilla essence.
  • When it boils turn into low flame and heat for 5 more minutes. Let it cool. Sieve the maida and soda powder and add to the date water. 
  • Mix well Transfer into greased baking vessel.
  • Keep in the oven and bake at 175 degree for about 30 to 40 minutes.

Kalkand ( Sweet) ( Microwavable)

Kalakand is like thirattipal in a solid form.You can make with condensed milk and ricotta cheese in microwave.( quantity would be more because of the cheese) It takes 10 to 12 minutes if you make the below quantity.

Ingredients

  • Condensed milk.........................1 tin
  • Ricotta Cheese.........................1  box
  • Ghee........................................1tsp
  • Mixed nuts...............................1/4 cup
  • Cardamom Powder..................1/4 tsp
Method
  • Mix ricotta cheese and condensed milk together. 
  • Keep in the microwave for 5 minutes uncovered. 
  • Take it out mix well again keep for 3 more minutes.
  • Till it becomes thick you have to keep in microwave 2/3 times for 2 minutes.
  • When it turns to very thick add the broken nuts, cardamom powder and ghee. 
  • Press in the vessel with a flat spoon and keep it out. 
  • After it cools down, cut into shapes.

Jangri

Jangri is the sweet which mostly we prepare for Diwali, festivals and weddings. Everybody love this sweet.I have made this two times. .In my house all like this sweet. Jangri. is a very juicy ,tasty  and classic sweet.

Ingredients

  • Urad Dal.........................1cup
  • Orange Food Colour........a pinch
  • Saffron.............................4/5 strings
  • Sugar...............................1cup
  • Lemon Juice.....................1tsp

Method
  • Soak the Dal for 3 hours and grind with little water till it becomes smooth and fluffy.(grind in wet grinder)
  • Add food color , mix well and keep. 
  • Another  pan add little water and sugar let it boil for 3 to 4 minutes and put off the flame.
  • Take a thin cloth or zip lock bag and make a small hole at the center. 
  • Heat ghee or oi l.Fill the dough in the cover and do in circle way and small circle around the big circle.
  • You have to practice this. 
  • Practice makes this perfect.
  • Deep fry on a medium heat till crispy and golden on both sides.
  • Drain them all and immerse in the sugar syrup. 
  • When the jangris are coated with sugar syrup, remove and keep them in plate.
  • Use grinder or food processor for the batter.
  • Make it in a low flame and in flat bottomed pan.
  • You can use ghee instead of oil.
  • No need of using rice flour.unless if you use grinder.

Black Urad Dhal and Sesame Seeds Ladu (Sunnundalu)


Black urad dhal and sesame seeds ladu is famous in Andhra and I learnt this recipe from my friend.This is very healthy sweet. I have taken less sugar so that you can get the taste of dhal. It is so delicious sweet. Try and enjoy yourself.
Ingredients
  • Black Urad Dhal..................1cup
  • Sesame Seeds......................1cup
  • Sugar...................................1cup
  • Cardamom Powder.............1/2tsp
  • Melted Ghee.......................1/2 cup
Method
  • Dry roast the black urad dhal in a low flame( about15/ 20 minutes) til you get a pleasant aroma.
  • The same way roast the sesame seeds.
  • Let it cool down. .Powder  the dhal  sesame seeds and sugar  into fine powder separately.
  • Transfer to a mixing bowl. Add cardamom powder.
  • Pour ghee slowly and mix. 
  • Using hands make small sized balls.If needed add more ghee.
  • Black urad dhal can be powdered small portion by portion so that it is equally powdered.
  • You can add more sugar if you like.

The pods are collected when brown, broken open and the hard seeds removed. The empty pods are washed and dry roasted and finally milled to a very fine powder, which is naturally sweet. This powder can be used in the same way as cocoa.
. The carob tree grows in the Mediterranean and is scientifically called Ceratonia siliqua.


Ingredients
  • Carob powder………. half cup
  • Dates…………………half cup
  • Walnuts………………half cup
  • Coconut flakes…….... 2tbsp

  • Soak the dates for 2 hours. Grind the dates using the soaked water..
  • Powder the walnuts coarsely. Mix the date paste, carob powder and walnuts well. 
  • With wet hands roll the carob mixture into small balls. 
  • Roll in coconut and chill(keep in the fridge) until ready to serve

Ras Malai

Ras Malai.This is one of my favorite sweets. Very easy to make this sweet.
Ingredients
  • Milk......................................................4 cups
  • Sugar....................................................3tbsp
  • Cardamom Powder...............................1/2tsp
  • Thinly sliced almonds and pistachios......3tbsp
  • Rasagulla..............................................10

Method
  • I  use rasagulla for ras malai. Remove the water and make the rasgulla flat and keep.
  • Boil the milk (I use 2%) on medium heat and reduce to half. Stir continuously so that it wont burn on the bottom.
  • Add the sugar and cardamom powder. 
  • Drop the rasagulla one by one into the milk and let it boil for 2 to 3 minutes.transfer the ras malai into a serving bowl. 
  • Sprinkle the nuts.
  • Chill the ras malai and serve.

Sukiyan

Sukiyan is a sweet dish.It is not a normal sweet we make at home.This sweet mostly prepared only on shradham day with appam, vadai, ellu urundai and sugiyan.
Ingredients
  • Green Gram.....................1 cup
  • Grated Jaggery.................3/4cup
  • Grated Coconut...............1cup
  • Rice.................................1/2 cup
  • Urad Dhal.........................2tbsp
  • Salt.................................. A pinch
Method
  • Dry roast the green gram until you get nice aroma.
  • Cook the green gram in pressure cooker.
  • Remove excess water and keep.
  • Boil Jaggery with 1/4 cup water and strain all the dirt.
  • Heat the jaggery, when it start boiling add the coconut and mashed the dhal
  • Keep stirring until all the water evaporate and the mixture becomes thick.
  • When it is cooled, make small balls and keep.
  • Soak the dhal and rice  for 2 hours and  grind into fine paste by adding salt.
  • It should be like dosa batter consistency.....
  • Heat oil in a pan when it hot, dip the balls in the batter and drop one by one.
  • When they are golden brown remove them from the oil into a paper towel.
  • You can make this filling with chana dhal, coconut.The method is the same.

  • Apricots.................2tbsp

  • Brown sugar............1/4 cup
  • Baking Soda...........1/4 tsp
  • baking powder........1/4tsp
  • Egg.........................1
Method
  • Mix oats and buttermilk well.. Keep it aside for 15 minutes.
  • Mix flour, baking powder, baking soda and salt.
  • Add walnuts  apricots, oil egg and brown sugar. to oats mixture 
  • Mix well and put in greased muffin cups.
  • Bake in 350 degree for 10 to 15 minutes.

  • Rice flour........................1cup

  • Coconut Pieces...............2tbsp
  • Urad Dhal Powder..........2tbsp
  • Water..............................1cup
  • Ghee................................1tsp

  • Roast the raw rice flour into golden brown and let it cool down.
  • Heat 1cup water and add jaggery and let it boil. Add the flour, mix well. 
  • First it is little watery but when it cooled down it becomes thick. 
  • Add roasted urad dhal powder ,cardamom powder. ,ghee and sesame seeds .
  • You can prepare the dough and keep the previous day. 
  • Make small balls with the dough. Heat a pan with oil when it is hot drop all the balls. 
  • Make the flame low and cook till they become golden .

  • Bread Slices........................2

  • Milk..................................2cups
  • Cardamom........................a pinch
  • Cashew Nuts........................few
  • Kesari Powder....................a pinch
Method
  • Remove the sides of the bread and make very small pieces. 
  • Add ghee in a pan fry the bread pieces till it becomes golden.
  • The add the milk(If needed add more milk) and it should cook the milk. 
  • Add sugar, kesari powder and 1tbsp ghee and stir till it comes out of the sides. 
  • Decorate with roasted cashew nuts.I never expected it so tastier.
  • The preparation is like rava kesari.

  • Pori........................4cups
  • Powdered Jaggery..1/2 cup

  • When the jaggery will become  soft ball consistency,add the coconut pieces and cardamom powder.

Ethapazha Halwa(Ripe Plantain Halwa)

This halwa is typical Kerala special and very tasty too.We make on Onam festival day

  • Sugar.................................1cup

Method
  • Take ripe ethpazhams for this halwa. 
  • Remove the skin and cut into small pieces. 
  • Heat a thick bottomed vessel with 1/2 cup of water  and add  sugar. 
  • Let it boil. Then add the pazham and stir  continuously.
  • Add ghee little by little while stirring.
  • The colour should change into brown and ghee comes out of the dough. add cardamon powder.
  • Transfer the halwa from the pan to plate. 
  • No need to grease the plate because it has ghee. 
  • Level the halwa with a spoon and cut into shapes when it cools.Very tasty sweet.

Whole Wheat Atta Halwa

This halwa is very very easy and tasty too
.
Ingredients
  • Whole Wheat flour..............................1cup
  • Sugar..................................................2cups
  • Cardamom Powder............................1/2tsp
  • Ghee................................................2tbsp
  • Cashew Nuts......................................few

Method
  • Heat a pan with ghee add the wheat flour and roast till  the atta's raw smell goes. 
  • Add the sugar, cardamom Powder and roasted cashews. and stir with our lumps.
  • After some time the ghee comes out the dough, spread it in a greased plate. 
  • Cut it  into squares when it is cooled down.

Badusha (Diwali Sweet)

Badusha is a famous sweet in India. It is made during Diwali and weddings.It is not too sweet and tasty too. I prepare this sweet  for Diwali.
Ingredients

Badusha












  • Maida...................3cups
  • Ghee.....................3tbsp
  • Baking Powder.....1/2 tsp
  • Bakin Soda............1/4tsp
  • Yogurt..................3cups
  • Sugar.....................5cups
  • Cardamom............1/2tsp
  • Salt to Taste
Method
  • Mix maida, ghee, baking powder, salt .Add yogurt and make a thick dough 
  • No water..Keep the dough in the fridge for about two hours.
  • Prepare sugar syrup by adding water to the sugar and boil to one thread consistency.
  • Heat a pan with oil. Make a lemon size ball with the dough and  flatten it and press at the middle with your thumb.drop them in the hot oil. 
  • When they are in golden colour, remove them and keep to cool. 
  • Drop all the badushas in the syrup and keep 15 minutes. 
  • Remove them and keep them in a tray.
    The badushas are coated with the sugar syrup .

Wheat Halwa (Diwali Traditional Sweet)

Wheat Halwa

Tirunelveli Halwa is very famous. Whenever we visit Tirunelveli we buy lots of halwa for our friends. We buy from old Shanthi stores.For every diwali we used to make this halwa.It is time consuming work. But the taste is very very good. Here is the recipe.


Ingredients

Wheat....................2cups
Sugar....................2cups
Ghee.....................500gms
Cashew nuts..........few
Saffron.................a pinch
Cardamom Powder......1tsp

Method

Wash and soak the wheat overnight. 
Grind the wheat adding enough water to squeeze out all the milk..
Remove the wheat milk and filter it. Keep it for  a day.
Remove the watery layer.Bottom you get thick milk. 
Pour the milk in thick bottom vessel add sugar and cook.
Keep the flame low.Add ghee in between stir continuously.Add the saffron and cardamom powder.
Cook till the halwa becomes very thick.You can see the ghee coming out.
Add the roasted cashew nuts. 
Spread in a greased plate.Cut them into squares when it becomes cool.
