Sarkara Upperi

Sarkara Upperi

This sweet upperi we make at home in Kerala. Now you can get in shops.
It is very tasty and usually serve in Sadyas.
Ingredients
  • Raw Plantains..................................3
  • Grated Jaggery...............................2 cups
  • Cardamom Powder.......................1 tsp
  • Dry Ginger Powder........................1tsp
  • Roasted Cumin Powder................ 1 tsp
  • Sugar............................................1/2 cup
  • Oil to fry.
Method
  • Cut the plantain lengthwise,equal size thick pieces after removing the skin.
  • Heat a pan with oil fry them till they become crispy.

  • Heat pan with half cup of water add the jaggery to make syrup
  • Add roasted jeera(cumin seeds)  powder, cardamom powder2tsp sugar...
  • When the syrup becomes thick add the fried bananas.
  • When all the chips dried remove from the flame.
  • Slowly stir and add 1 tsp sugar,dry ginger powder  to make banana pieces crisp and separate.

Puran poli is a Maharashtrian dessert.Polis are like chapathis with the puran(sweet made with lentils) stuffe in it.
Ingredients
  • Chana Dhal..........................2cups
  • Powdered Jaggery................2cups
  • Maida/Atta..........................2cups
  • Cardamom Powder.............1 pinch
  • Ghee/Oil.............................3tsp
  • Warm water to knead the dough
 Method
  • Add water and oil to the flour, knead into a soft dough. 
  • Apply oil and keep. Cook the chanadahl till it becomes tender. 
  • Grind in blender with our water. Add powdered jaggery and boil them in a low flame.
  • Add little ghee and make a soft filling.
  • Take a little filling and make ball.
  • Take the ball sized dough and roll it like chapathi,place the same sized ball of filling in the center and seal all round.'Spread this dough into 6" diameter carefully by applying flour.
  • Heat a pan and place the poli in that when one side is golden brown add ghee and turn the other side. and roast it. Serve hot by adding ghee on the top.

Shankarpali

Maharashtrian makes this sweet dish for diwali.

Ingredients

Maida………………….2cups
Sugar…………………..1cup
Ghee……………………1/3 cup
Milk.................................3tbsp






Method

Heat a pan with milk add sugar and ghee together till the sugar dissolves. 
When it cools down, add maida and knead into soft dough. 
Roll the dough into chapathi size and cut into small diamond shapes.
Keep them in a cloth. Heat the ghee or oil fry them in a low flame till they become golden brown. 
If you want less sweet, add 2 cups of maida more and make shakarpali.
(You can add 3 tbsp fine suji (Rava) while making the dough I have not added in my dough)

Another way to do this dish
Mix milk, maida and little ghee and make a dough. 
Make chapathi and cut into square pieces.
Heat  a pan add little water and sugar, make a pagu.
Just one string consistency, add the pieces and mix well. let them cool down
Crispy shanka pali ready.
