Walnuts Banana Cake

Walnuts Banana Cake 

I love this cake very much. My daughter prepared this cake and I tasted for the first time.Good one.

Ingredients

  • Whole Wheat Flour………...............2 cups
  • Baking Powder…………………….2 tsp
  • Sea Salt…………………………….1/2 tsp
  • Walnuts…………………………......half cup
  • Banana……………………………..2
  • Corn Oil…………………………...4 tbsp
  • Rice Syrup……………………........1 cup milk/ soya milk
  • Vanilla………………………………1tsp

Method

  • Toast the walnuts and chop them coarsely. Mix the flour, walnuts baking powder and salt.
  • Cut the bananas, mash it nicely. Add oil, syrup, vanilla, milk and mix all together. Make a batter.
  • Add this wet ingredients to the dry ingredients to form a thick batter. Grease the baking pan, pour this batter. Bake it in 350 degrees for 45 to 60 minutes. Take the cake out and keep out for sometime to cool.

Ingredients

Milk…………………………..1 litre
Sugar…………………………..1cup
Lime…………………………..1
Cardamom powder…………….1tsp

Method

Bring the milk  to boil in a bowl.
When boiling add lemon juice. Put off the flame.
Milk separates into whey and paneer.
Remove all the water and  keep it for a night.
Form balls out of the paneer and keep aside.
Add 3cups of water and sugar in a bowl to boil. Place the paneer balls into the syrup. Let it boil for 10 minutes till the balls float in the syrup. Add cardamom powder.

Previously I posted Kaju katri recipe prepared in traditional way. Today I tried this recipe using microwave. it is very easy( only 2 minutes )

Ingredients

Kaju /Cashew Nuts.... 1cup
Powdered Sugar........3/4 cup
Milk..........................3 tbsp..
Ghee.........................1tsp

Method

Powder the cashew nuts finely. . 
You can use powdered ready made sugar.
Mix both well in a microwavable bowl by adding milk. 
Keep it in microwave for 1 minute high first. 
The bubbles come up.Take it out and mix well. 
Again keep it for 1 more minute. 
Mix well and if it is watery, add little more powdered cashew nut. 
Make a dough by applying ghee on the hand roll it to a square. 
Cut into desired shape by pizza cutter
.It is very tasty and easy to prepare.

Aval Puttu (Puffed Rice Puttu)

I made this sweet recipe for Gokulashtami and Navaratri . It is very easy to prepare.

Ingredients

 
  • Aval(Thick Aval).............2cups
  • Jaggery...........................1 and1/2 cups
  • Cardamom Powder........1/2tsp
  • Coconut Flakes..............3tbsp
  • Grated Coconut..............3tbsp
  • Cashew Nuts..................3tbsp

Method.

  • Roast the aval for 5minute and powder it. 
  • Mix coconut and little warm water with the powdered aval till it becomes moist and soft.
  • Heat pan with little water and jaggery.
  • The syrup should be thick.( you drop a little in water and able to make solid) 
  • Put off the flame and add the aval.
  • Fry the coconut and cashew nuts in ghee and add to the aval.
  • Sprinkle the cardamom powder. You can keep this dish for a week.
  • Same way you can prepare arisi puttu. Use wet rice powder instead of aval.

Etha Pazham nurukku (Ripe plantain dessert)

(Pazham puzhugiyathu in malayalam) I make this recipe in USA, because you can get the ripe plantains plenty here but the taste is different .I just keep in the pazhams in microwave after chopping both sides. It is very healthy breakfast and very filling too.This sweet dessert is cooked with powdered jaggery.

Powdered Jaggery……………………1cup

Ghee…………………………………1tsp

Method

Cut the banana into 2” pieces with the skin . 
Heat a pan with little water add the jaggery powder and banana pieces.
Keep the flame in low. Cover the pan. 
Stir from time to time. 
The jaggery becomes thick and banana pieces are cooked and incorporated with jaggery well. 
Add the ghee and serve. Remove the skin and eat it.
In Kerala we prepare this very often especially children love this pazham nurukku.

Sukiyan

Sukiyan(It is a sweet)
 

We prepare this sweet for shradham day. It is made up of moong dal/chana dal with jaggery.
Ingredients

  • Moong dal …………………………..1 cup
  • Jaggery……………………………....3/4 cup
  • Raw rice ……………………...........1cup
  • Urad dal……………………............1/4 cup
  • Cardamom powder………………1/4 tsp
  • Salt to taste
  • Oil to fry.
Method

  • Boil the moong dal in cooker with little water.and cool it, grind it into paste.
  • Add jaggery and heat it till it becomes thick. Make small balls and keep
  • Soak the rice and dhal for 2 hours and grind(like idli dough) into fine paste adding salt like.
  • Heat a pan with oil. Dip the moong balls into the batter and drop one by one in the hot oil. 
  • When it becomes red both sides remove and keep in a paper towel.It is very tasty.

Athirasam ( Sweet)(அதிரசம்)

  •  Raw Rice………………………2 cups
  • Jaggery…………………………1 cup
  • Soak Raw Rice………………   .1 cup
  • Cardamom Powder………......  ..1/2 tsp
  • Dry Ginger Powder………......  ..1 pinch

Method 


  • Soak the rice for 2 hours. Remove the water and spread in a towel. 
  • When it dries grind in a mixer.
  • Sieve it to get fine powder. 
  • The powder should be slightly wet.
  • Heat a pan with little water add the jaggery and make a syrup. 
  • Filter this syrup to remove the stone
  • Boil again till it forms one thread consistency Kambi padam(Put a drop jaggery in cold water then it should be like soft gel).
  • Add this syrup, cardamom powder to the rice flour to a soft dough
  • Heat a pan with oil to fry.
  • Apply oil in plantain leaf of plastic, take small amount dough and spread like small discs. Deep fry them and keep them in paper towel.

I tried Poli with dates at home and came out very tasty. Even though I made 6 or 7 polis because in my house no body eats sweets except me.But they tasted it and said very tasty. So you can also try this dates poli.

Ingredients

Covering


  • Maida or wheat flour.........1 cup
  • Pinch of salt
  • Til oil(sesame oil)...........2tbsp
  • Water to knead
  • Stuffing
  • Dates........................1cup
  • Jaggery......................1/2 cup
  • Ghee.........................3tbsp
  • Cardamom Powder..............1/4 tsp
  • Besan........................1/4 cup
  • Grated Coconut...............3tbsp
  • Milk.........................1/2 cup

Method


  • Soak the dates in the milk for 3 hours and grind into fine paste.
  • Heat a pan with ghee add besan and coconut fry a little to remove
  • the raw smell of besan.
  • Add jaggery and very little water. 
  • When it become a paste add the dates mix,cardamom powder and mix well.
  • It becomes thick, remove, cool it and keep it in the fridge.
  • See that stuffing is not too moist. 
  • It is so tasty you definitely eat this.
  • Make small balls and keep.

  • Take a bowl add maida/flour , oil, salt all mix well and add water knead dough.
  • The dough should be soft and pliable.
  • Keep this dough covered for an hour.
  • Take little dough spread like puri size and keep the small dates mix and cover it all sides and roll into chapathi size.
  • If you know to make parathas, it is not difficult.















Heat dosakal put this poli cook both sides by adding ghee.Serve with ghee.

Edichu Pizhinja Payasam(Thengapal Payasam

This payasam is very tasty. This is made up of rice ,jaggery and coconut milk. All feasts we (keralites)prepare this payasam in variations like ada pradhaman, pazhapayasam and parippu pradhaman.

Ingredients
  • Raw rice. .. (red rice is very tasty)........ 1cup
  • Jaggery.......................................................2cups
  • Coconut milk first one..............................2cups
  • Coconut milk.second one.........................2cups
  • Cardamom powder................................1/2tsp
  • Coconut flakes.........................................1/4 cup
  • Ghee..........................................................3tbsp
.Method
Take 2 coconuts ,grate and extract thick milk by grinding in the mixer.after adding 2cups of water extract thin milk and keep.
  • Cook the rice adding 2cups of water. 
  • When the cooked well add jaggery and stir well.
  • Add the thin milk and boil nicely.All should mix well. 
  • Lasly add the thick milk andit should not boil. 
  • Just heat it and remove in a serving bowl. 
  • Fry the coconut flakes in ghee till it becomes red. 
  • Add this along with cardamom powder into the payasam.


 Ada Pradhaman
  • Rice Ada (can getreadymade ads in Indian shops)..........1 cup
  • Jaggery..................................................................................2cups
  • Coconut Flakes......................................................................1/4 cup
  • Cardamom Powder..............................................................1/2 tsp
  • Ghee to fry the coconut
Method
  • Fry the adas in ghee lightly and boil this with 2 cups of water..
  • Extract the coconut milk first and second times.
  • When the adas are cooked, add jaggery (do not add jaggery first,the ads are will not cook).
  • First add the extract thin milk and cook well. Add the extract thick milk last and should not allow to boil.
  • Fry the coconut with ghee add to the payasam. 
  • Sprinkle cardamom powder.
  • Prepare adas at home. Soak 1/2 cup raw rice in water.Grind into fine paste. 
  • Take plantain leaf ,apply coconut oil pour the batter and spread thinly.
  • Roll up this, and tie with a string. Boil 2 cups of water and drop the roll into the boiled water.
  • Cook for 10 to 15 minutes. 
  • Remove the rolls and put it into cold water, remove and cut into pieces.

Bundhi ladu

Ingredients

Besan.............................. 1 cup
Rice flour..........................1 tbsp
Sugar................................1 and half cup
Cardamom powder.........1tsp
Diamond kalkandu..........2tbsp
Cashewnuts......................12

Clove..................................8
Colour................................a pinch

Method

For the sugar syrup
Heat a pan with little oil and add sugar.Let it become one thread consistency, add the saffron colour, cashew nuts, kalkandu, cloves, cardamom powder.

For bundhi
Mix besan and rice flour.like bhajia batter.
Heat a pan with oil. Take the bundhi thattu drop 1 big spoon batter. 
Bundhi droplets fall in the hot oil.Stir them till they are fully cooked. 
Collect all the bundhi straightaway drop in the sugar pagu. 
Keep doing till the syrup is full.Make medium sized balls.

Kas Kas Payasam (Kas kas kheer)

  • Kas kas.........................100gms
  • Coconut..........................50 gms
  • Rice............................one handful
  • Cardamom....................4
  • Cashew nuts.....................10
  • Water..............................1/4litre
  • Jaggery...........................200gms
  • Boiled milk...................1/4 litre
Method
  • Wash the kas kas and fry it, add rice and fry again. 
  • Mix coconut cashew nuts cardamom, fried rice adding water and grind in a blender.
  • Then add the powdered jaggery. 
  • Grind nicely and.mix milk with this mixture. 
  • Sweet payasam is ready.,

Ellu Urundai ( Sweet Sesame Balls)

This recipe is the simple recipe and very healthy.We make this ellu urunEdai on Shradham day.We use black sesame seeds for this sweet.

Ingredients
  • Black Ellu (Til /Sesame Seeds)......one cup
  •  Jaggery........................................half cup
Method

  • Fry the ellu till it crackles.
  • Keep little water and add the powdered jaggery.
  • Stir and when it becomes one thread consistency put off the gas and add the sesame seeds.
  • Mix well and make small balls.This is the the simple way for making ellu urundai. 
  • Adding coconut is optional.
