Christmas Cookies

Christmas Cookies

Ingredients
  • Maida............................................3cups
  • Powdered sugar...........................2cups
  • Butter............................................2cups
  • Eggs..............................................1
  • Cardamom powder........................1/2 tsp
  • Lavang..powder.............................1/2 tsp
  • Jathikai powder..............................1/4 cup
  • Orange juice...................................1tsp
  • Vanila essence...............................1tsp
  • Broken badam or cashew nuts.......1 cup
Salt to taste
Method
  • Mix butter and sugar in a bowl.
  • Add the egg and mix till the sugar dissolves.
  • Then add maida cardamom, cashew nuts, orange juice, salt and vanila essence.
  • Mix very well. Keep this dough in the fridge for an hour.
  • Take this dough and make chapathi.
  • Cut this into different shapes cookies, keep these cookies in a cooking tray and bake at 200 degrees for 5 minutes.

Mysore Pak

Mysore Pak

A sweet dish made from besan (Chick flour)
 Ingredients

Sugar..........................2cups'
Ghee...........................3cups
Besan.........................1cup
Cardamom powder.....1/2 tsp

Method

Add 2 tbsp hot oil in the basan and nicely mix it. Sieve this into a fine powder. Heat a pan with 1/2 cup water add the sugar. Stir it Keep the hot ghee in one side.When the syrup is in one thread consistency. Stir it with one hand and add the besan flour slowly .In between add the hot ghee. Keep in medium flame.Continue this till the mixture leaves the side of the pan.Add cardamom powder.. Pour this mixture into a greased plate.Cut into pieces.

Gund Ka Ladus(Dink Laddus, Edible gum ladus)

Gund ka Ladu (Dink ladu,Edible Gum ladus)

Dink is a type of edible gum (gum  cristals)white in colour.. If you roast in ghee, it will fluff up into white balls.
Dinka che ladus are highly nutritious and should be eaten in winters and not in summers as the gum generates heat in the body.Good for ladies especially pregnant women since it provide good strength.


Ingredients
  • Sugar....... ......................2cups
  • Cashew Nuts...................1/2 cup
  • Badams..........................1/2up
  • Walnuts..........................1/2cup
  • Edible Gum (Gund).......... 1cup
  • Ghee..............................1/2 cup
  • Roasted Coconut.............1/2 cup
  • Kajur (Dates)..................1/2 cup
  • Water.............................1/4 cup
  • Ginger Powder................1tsp
Method
  • Heat a pan with ghee add the crushed edible gum and roast it till it becomes golden fluffy in a medium flame. 
  • Cut the dates into small. Roast the badam and nuts and powder them into fine. 
  • Heat another  pan with little water add sugar to boil and becomes one thread consistency. 
  • Add all together and mix  well and make balls with the help of little ghee while it is hot. It is very healthy sweet. 
  • This is a north Indian. sweet.
  • You can use jaggery instead of sugar. you can add poppy seeds powder and methi powder.

Dink Cake
I made   this dink   into  cakes instead of ladus using the above method. Boil little longer time to form into cake form.

Kaju Burfi is made of cashew nuts, sugar and little ghee

Ingredients 

  • Cashew Nuts........ 1cup
  • Sugar..................3/4 cup
  • Milk ...................2tbsp
  • Ghee...................2tbsp
  • Water....................quarter cup

Method  

  • Soak the cashew nuts and grind with milk to a nice paste.
  • Heat a pan with water add sugar and make a syrup..
  • It should be one thread consistency.
  • If you drop a drop on water, it should not dissolve.
  • This time add the paste and mix it continuously till it becomes a thick dough.
  • Take a one spoon dough and roll it, it should form a ball.
  • Grease a plate and pour this dough and spread. When it cools ,cut into pieces.
  • It is very tasty burfi. Make this burfi for Diwali Day and enjoy.

Blueberry Pie

Very healthy and easy to make. No sugar or ghee
Nut and Date pie crust
Ingredients:

Blueberry Pie is with blueberry and dates
Blueberry Pie

  • Pecans (dry)..................2 can
  • Sea Salt............................1 tsp
  • Medjool Pitted Dates ...1 can
  • Vanilla Powder..............1 tsp.
  • Place all ingredients in food processor with "S" blade and process well.
  • Press by hand into a pie plate until entire pie plate is covered
  • Note: Crust may be made ahead of time and refrigerated or frozen
 Filling

Ingredients:
  • Blueberries ..................1 pint
  • Sea salt.........................1tsp
  • Ripe bananas...............2
  • Vanilla ..........................1 tsp
  • Raw honey....................2-3 tbsp

Method

  • Start with nut and date pie crust in a pie plate. 
  • Blend blueberries, bananas, honey and vanilla in food processor. 
  • Place mixture in pie plate. 
  • Garnish with blueberries on top.
  • Refrigerate for few hours for filling to harden

This sweet is very easy to prepare.
  • Rava (Suji).........................1cup
  • Sugar.................................2cups
  • Cardamom powder............1/2 tsp
  • Kesari powder...................1 pinch
  • Ghee..................................3tablesp
  • Milk...................................2cups
  • Cashew nuts.......................few..
Method
  • Fry the rava with 1 tsp ghee. Roast the cashew nuts. 
  • Heat a pan with 2cups of milk. When the milk boils, add rava slowly and stir it well without lumps. 
  • When the rava is cooked, add sugar, kesari powder and remaining ghee.
  • When it becomes thick add cashew nuts and cardamom powder.
  • Remove from the flame and keep in bowl..

Sarkarai Pongal

  • Rice...........................1 cup
  • Green Gram.............. 1/3 cup
  • Jaggery......................2cup
  • Ghee..........................3tbsp
  • Cardamom Powder....1 tsp
  • Coconut Flakes...........3tbsp
  • Cashew Nuts...............6
Method
  • Roast the gram till it becomes brown without oil.
  • Cook the rice and dhal with double the water in pressure cooker.
  • Heat a pan with 1/2 cup of water, add jaggery, till it becomes thick(like syrup). 
  • Add the cooked rice and dhal. Mix it well in a medium heat for few more minutes.
  • Fry the coconut flakes and the cashew nuts with ghee add to the sarkarai pongal. Sprinkle the cardamom powder.
