Okarai (Traditional South Indian Diwali Sweet)

Traditional Diwali Recipe Okarai

This is a traditonal diwali recipe. It is made from chana dal and jaggery.

Ingredients

  • Chana dhal...................... 2cups
  • Jaggery...........................2cups
  • Cardamom powder........1tsp
  • Cashew nuts...................few
  • Ghee..............................2tsp

Method


  • Wash the chana dhal and cook it with little water.
  • Do not over cook.Remove the water and grind coarsely in blender. 
  • Heat a pan with little water and add jaggery and stir it.
  • When the syrup comes out thick, pour one drop on little water.
  • If it is solid, add the ground chana dal and put off the heat.
  • Add cardamom powder and stir it continuously for 5 minutes. 
  • Fry the cashews and mix with okarai

Ingredients
  • Grated carrot.......................2cups
  • Milk......................................1cup
  • Sugar....................................1/2 cup
  • Cashew nuts and almonds
  • Chopped..............................1/2 cup
  • Ghee....................................3tbsp
  • Mava...................................100gms
  • Cardamom powder..............1tsp
Carrot Halwa is made of carrot and sugar

Method
  • Peel the carrots and grate them. Fry them with ghee. When it is fried add, milk, mava sugar and cook for 15 minutes . 
  • Fry the nuts in ghee and garnish the halwa. Sprinkle cardamom powder.
    Serve hot/cold. Very easy to make.

  • keep it in fridge.

Ingredients
  • Pasi parippu With the Skin.....1cup
  • Jaggery..................................1cup
  • Coconut Milk.........................1cup
  • Coconut Flakes.......................1/4 cup
  • Cardamom.Powder.................1/2 tsp
  • Broken Cashew Nuts..............3tbsp
Method
  • Roast the moong dhal till it becomes red. 
  • Wash the dhal and pressure cook it with one whistle.
  • Grind the grated coconut and take the thick milk. 
  • When the dhal is cooked ,add powdered jaggery and mix well. 
  • Let it boil for 5 minutes. When it is mixed well, add the coconut milk. 
  • The dhal should not boil after adding the coconut milk. 
  • Heat a pan with ghee and fry the coconut flakes and cashew nuts. 
  • Cashew nuts becomes golden,add to the payasam. 
  • Add cardamom powder too.Serve chilled or hot.
  • The same way you can make split chick pea(kadalai parippu payasam) payasam.

Carob powder
The pods are collected when brown, broken open and the hard seeds removed. The empty pods are washed and dry roasted and finally milled to a very fine powder, which is naturally sweet. This powder can be used in the same way as cocoa.It has many  nutritional values.
  The carob tree grows in the Mediterranean and is scientifically called Ceratonia siliqua.


Ingredients
  • Carob Powder………. half cup
  • Dates…………………half cup
  • Walnuts………………half cup
  • Coconut Flakes…….. 2tbsp 

Method

  • Soak the dates for 2 hours.
  • Grind the dates using the soaked water..
  • Powder the walnuts coarsely. 
  • Mix the date paste, carob powder and walnuts well. 
  • With wet hands roll the carob mixture into small balls.
  • Roll in coconut and chill(keep in the fridge) until ready to serve..

Chakkavaratti










  • Ripe jack fruit………1/2 kilo
  •  Jaggery…………….11/2 kilo
  • Grated coconut……..1 cup
  • Ghee…………………2 tbsp
Method
  • Remove the seeds from the chakkapazham (jackfruit). 
  • Cut into small pieces and boil this with 1 cup of water,
  • When it is cooked grind coarsely. 
  • Add jaggery and boil. No need to add water. 
  • Stir continuously till it becomes very thick . 
  • Add ghee and coconut and remove from the flame. 
  • Keep it a tight jar.(Want to keep this chakkavaratti for a longer period do not add coconut) .
  • It takes more than an hour to make chakkavaratti in a heavy bronze vessel called urali.
  • Uses of chakkavaratti:- we can eat it like jam, make elai adai or chakka pradhaman/ payasam.
  • Chakkavaratti Pradhaman(Jack fruit Payasam)

Ingredients
  • Chakkavaratti……………….1cup
  • Cardamom powder…. …………….½ tsp
  • Coconut milk (thick)………….2cups
  • Water ……………………… 1.cup
  • Jaggery………………………1/2 cup

Method

  • Boil the water with jaggery. 
  • When jaggery melts add the chakkavaratti and mix well.
  • Reduce the heat and add the coconut milk. 
  • When all mix well, turn off the heat add coconut and cardamom powder

  • Soak parboiled rice and raw rice for more than 6 hours.
  • Grind in to smooth paste adding sufficient salt.(like dosa batter)
  • Take a leaf  and show in the flame to make it flexible.
  • Apply ghee on it. First spread the batter on the leaf.
  • Keep 1 tsp chakkavaratti in the centre and fold it into half. 
  • Steam these adai’s like idli.Instead of chakkavaratti you can use modak purnam(jaggery and coconut mix)
